Raised in the enchanting city of Venice, Ferdinand “Fredi” Plaku’s humble beginnings as a kitchen line cook helped fund his way through culinary school. His passion and natural talent propelled him through the kitchens of Sicily until he eventually opened his first restaurant in Venice called Acquario.
Seeking new horizons, chef Fredi brought his expertise to the United States, where he became an integral part of Connecticut and New York’s vibrant culinary scene. Now as the executive chef and co-owner of Acquario in Keller alongside his partner Nino Rata, chef Fredi continues to captivate diners with his inventive cuisine. Marrying the authenticity of Italian flavors with the vibrancy of Texan hospitality, chef Fredi offers a symphony of flavors that reflects his commitment to culinary excellence.
