Chef David Gilbert has traveled far and wide. Now at Copeland’s Southlake in Hilton Southlake Town Square, he uses those experiences to come up with unique, flavorful dishes that keep guests coming back for more. Drawing from his time in Southeast Asia, chef Gilbert enjoys using fish sauce, lemongrass and galangal whenever he can.
He fell in love with cooking at an early age. From the time he could see over the counter at his parents’ house, he was experimenting — trying to mimic his dad’s every move! At-home cooking experiments eventually led to a cooking career in Michelin Star restaurants and a James Beard Nomination. In Southlake, chef Gilbert enjoys being a part of a passionate community of various industry leaders that always make a point to give back. People he describes as “My kind of people.”
