Celiac Strong Day is coming to Carroll High School! Celiac Strong Day is an International event held on May 16, 2024 to spread awareness of Celiac Disease by wearing the color blue! In the last two years, we've raised over $3,000 to find a cure for celiac disease. This year, we're teaming up with the CHS Student Council, Key Club, Carroll Medical Academy, Celiac Disease Foundation, Pinch of Salt and Unrefined Bakery to provide 100% celiac-safe treats.
Celiac disease is an autoimmune disease that affects the small intestines and is triggered by the consumption of gluten, a protein found in wheat, barley and rye. In individuals with celiac disease, the immune system mistakenly attacks the lining of the small intestine when gluten is ingested, quickly leading to damage or villi, nutrient absorbers. As a result, individuals with celiac disease may experience a range of symptoms such as abdominal pain, loss of focus, weight loss and nutrient deficiencies. If left untreated, it will quickly turn into osteoporosis, Type 1 Diabetes, Lupus, Addison's disease and Adenocarcinoma.
