The guys behind Craft & Vine, Tim and Matt Nystrom, are back with a new fast casual concept, Soul Bird Chkn Shack and Wing Bar. With a comfort food menu and quality ingredients, Soul Bird provides a plethora of foodie favorites all under one roof.
“There’s no concept like this on Oak Street,” Matt says. “We thought a chicken place would do really well here.”
But this is no ordinary chicken sandwich shop. Soul Bird offers gourmet sandwiches crafted with 24-hour buttermilk-brined chicken breast, grilled chicken or fried cauliflower.
“We were looking to create the best chicken sandwich out there,” Matt says.
After picking a protein, guests can choose how they want to enjoy it. The Seoul Chicken sandwich, tossed in gochujang sauce and served with fire-and-ice pickled vegetables on a toasted brioche bun, offers a kick. While the Oak St., a sandwich featuring applewood smoked bacon, sun-dried tomato goat cheese, crisp greens, tomato and house pepper jelly, provides a nice balance.
For a green alternative, go for one of the salads topped with breaded chicken, grilled chicken, cauliflower steak or chicken livers. The Bleu Buffalo — crisp greens, tomatoes, sweet onions, bleu cheese crumbles, bacon and choice of dressing with a house garlic buffalo sauce-tossed protein — offers bright flavors with every forkful.
Soul Bird also has gourmet crispy tenders and wings elevated with its house-made sauces, like mango jerk, chili piccata and chipotle honey barbecue.
While that’s plenty to choose from, guests should make room for Soul Bird’s shared sides. The Soul Fries are fully loaded, topped with cheddar cheese, bacon, green onion, buttermilk dressing and two crispy chicken tenders tossed in your choice of sauce. For more fried offerings, order the Mixed Nuts and Bolts — an assortment of fried pickles, mushrooms, buffalo cauliflower, jalapeño buttermilk dressing and soul sauce.
Soul Bird also offers Keto, Paleo, vegetarian and gluten-free options. And with rotating specials offering new flavor combinations, everyone can find something fresh to enjoy during their visit. Now the only choice is whether to wash everything down with a ice-cold beer or a glass of sweet tea.
